Percubaan pertama saya memasak real quiche. Kalau perasan, saya pernah mencuba crustless quiche yang mudah, just nak dapat gambaran tentang quiche & rasanya. Masa zaman kerja dulu, salah satu menu yang saya teringin nak cuba ialah Quiche. Nampak macam sedap sangat quiche kat O'briens tu. Tapi tiapkali saya visit oulet, mesti saya pergi order menu lain pulak... Sampai lah saya resign, tak jugak merasa quiche ni. Tu yang nak tau jugak apa rasanya. Bila buat crustless quiche, anak² enjoy aje (alah.... semuanya hantu telur, menu macam ni gerenti digemari diorang)... Jadi saya 'rajinkan' diri buat pie crust nya sekali..
Pie crust tu pon first time saya buat tau! Biasa kalau ada resepi pakai pie crust, saya memang tak rajin mencuba, takpon saya cheating guna puff pastry or biskut aje.. hehehe.. Nak buat macam mana, suka memasak tapi jiwa tak cukup kental buat benda² macam ni. Kali ni saya buat dengan bantuan Food processor tu (ni pon antara sebab saya beli food processor... Haaa.. kantoi!)... Resepi crust yang teramat sedap ni saya ambil dari sini... Saya amat berpuashati dengan resepinya yang mudah & hasilnya memang menawan..
1 1/2 cups all-purpose flour
1/4 teaspoon fine salt
1 teaspoon granulated sugar
8 tablespoons cold unsalted butter (1 stick), cut into small pieces
4 to 5 tablespoons ice water
INSTRUCTIONS
Combine the flour, salt, and sugar in a large bowl and stir briefly until the mixture is aerated. Using a pastry blender or your fingers, cut the butter into the dry ingredients until it’s in pea-size pieces that are slightly yellow in color, about 4 to 5 minutes.
Drizzle in 4 tablespoons of the ice water and mix just until the dough comes together. (Add the last tablespoon of ice water if necessary, but don’t overwork the dough or it’ll become tough.)
Shape the dough into a flat disk, cover it in plastic wrap, and refrigerate for at least 30 minutes, then use it in the pie or tart recipe of your choice.
Dari segi rasa memang saya puashati, cuma saya sedikit kecewa coz tak boleh masak crust tu dengan lebih lama coz oven dah ditempah oleh roti benggali. Benggali tu takleh dibiar lama², kalau merajuk memang collapse terus!

Ingredients
Original recipe makes 2 - 9 inch quiche (saya buat separuh adunan sahaja)
1 tablespoon finely chopped green bell pepper
1 small onion, finely chopped
1 (4.5 ounce) can mushrooms, drained and chopped
6 eggs
2 cups heavy cream
8 ounces (226 grams) shredded Monterey Jack cheese (saya gunakan mozarella)
8 ounces (226 grams) shredded Swiss cheese (saya gunakan cheddar)
12 (340 grams) ounces cooked ham, chopped (saya gantikan dengan sosej)
1/2 teaspoon vinegar (tak letak)
1/8 teaspoon dried tarragon (tak letak)
1 pinch garlic powder
1 pinch ground nutmeg
1 pinch dried parsley
salt and pepper to taste
Directions
Preheat oven to 350 degrees F (175 degrees C) and pre-bake crusts for 10 minutes. Set aside to cool on racks.
In a large skillet, saute green pepper, onion and mushrooms until onions are soft and translucent. Remove from heat and set aside.
In a large bowl, mix eggs and cream together. Stir in the shredded Jack and Swiss cheese, chopped ham and sauteed vegetables. Stir in vinegar and season with tarragon, garlic powder, nutmeg, parsley, salt and pepper. Divide filling into the 2 baked pie crusts.
Bake in the preheated oven for 55 to 60 minutes, or until filling is set and crusts are golden brown.
