Garlic Parmesan Rolls

Mari kita meroti lagi!  Roti ni saya buat untuk dinner.  Dapat agak banyak, suami saya tukang perabis.  Itule sebab saya rajin je buat roti, gerenti ada tukang makan.. ehehe..

Roti nampak kembang sikit (patutnya toncit) sbb doh agak lembik.  But the taste is awesome.  

Resepinya oleh Chef John seperti berikut

1 (.25 ounce) package active dry yeast
1/2 cup all-purpose flour
1/2 teaspoon white sugar
1 cup warm water - 100 to 110 degrees F (40 to 45 degrees C)
1 teaspoon fine salt
1 tablespoon olive oil
1 egg
1 3/4 cups all-purpose flour
1 1/2 tablespoons melted butter
2 cloves garlic, crushed
1/2 cup freshly grated Parmigiano-Reggiano cheese (parmesan)
1/2 teaspoon ground black pepper, or to taste
1/4 teaspoon cayenne pepper, or more to taste
2 tablespoons freshly chopped Italian parsley
olive oil for brushing
1/4 cup freshly grated Parmigiano-Reggiano cheese
  • Mix yeast, 1/2 cup of flour, sugar, and warm water in a bowl. Cover and let rest in a warm place until bubbling, about 15 to 20 minutes.
  • Stir in salt, olive oil, and egg. Mix thoroughly and stir in remaining 1 3/4 cup flour to form a loose, sticky dough that pulls away from the sides of the bowl. Cover with a damp towel and let rise in a warm place until doubled in size, about 1 to 1 1/2 hours.
Doh yang sudah naik kali pertama, agak lembut tapi tak melekat 
Sedia untuk dibentuk.

  • Punch down and scrape the dough from the sides of the bowl. Turn onto a lightly floured surface. Sprinkle with more flour and shape into a rectangle. Roll out to an approximately 10x12-inch rectangle, about 1/2-inch thick. Brush with melted butter; sprinkle with garlic, Parmagiano-Reggiano cheese, black pepper, cayenne, and parsley.
Canai nipis (sapukan sedikit tepung pada pencanai tu ye..)

Sapu dengan butter cair yg dicampur garlic (saya tumbuk lumat garlic)

Renjis dengan parsley, paprika, blackpepper & PARMESAN

  • Press flat one long edge of the rectangle and brush with water. From the opposite end, roll evenly into a log. Press the seam together to seal. (saya tak buat, just roll macam biasa aje)
Gulung & potong 8 atau ikut saiz yang disukai
Saya potong 10

  • Cut into 8 rolls. Transfer to a baking sheet, cut side up. If necessary, cut an ‘X' in the top of each roll to expose filling.
  • Preheat an oven to 400 degrees F (200 degrees C).
Sapu permukaan roti dengan minyak (saya sapu dengan baki butter&garlic tadi) & renjis parmesan.  Kemudian gunting bahagian tengah untuk dedahkan isinya
  • Brush each roll with olive oil. Sprinkle with more cheese. Cover and let rise until slightly puffed, about 20 to 30 minutes. (saya naikkan dalam microwave oven, tak cover tapi tutup pintunya)
  • Bake in preheated oven until the tops are golden brown, about 20 minutes.

Since doh saya agak lembik, doh meleleh ke tepi sikit, jadi melebar & hampir melekat with each other. Ni dah siap & ready dibakar dalam preheated oven 200c selama 20 minit atau sehingga roti bertukar golden brown.
Ini first time saya guna all purpose flour (tepung gandum biasa tu) untuk buat roti.  Mula-mula bimbang juga tak menjadi, ye la tepung high protein lebih 'kuat' untuk stretch sebab tu ia sesuai untuk dibuat roti.  Tapi saya ikut ajelah kehendak resepi.  Tengok dulu ok ke tak.

Lepas diadun memang lembik sungguh hasilnya (saya tak uli, gaul dengan spatula aje).  Ada juga plan nak tambah tepung (maybe kualiti tepung saya kurang ok ke sbb tu lembik).  Tapi biarkan aje lah.. lagipun doh ni tak melekat walaupun lembik semacam.  Lepas dibentuk, & dbakar...

Tadaaa..!!! Memang awesome.  Rotinya rangup & ringan sangat.  Dalamnya agak berongga & kurang padat macam biasa tapi teksturnya yang tersendiri menjadi roti ni amat special.  Suami saya makan 7 out of 10 tu kot.. (buruk lantak!).. hehehe.. Saya pula sukakan teksturnya tapi takle makan banyak sbb rasa tak puas.. (perut kampung).. ;) .. Maybe next time saya akan tambah mayo or gula untuk naikkan rasa manis sikit sbb roti ni rasa lemak-lemak masin (cheesy) aje.. kalau ada rasa manis sikit maybe saya lagi suka kot.

Apa pun roti ini memang syok dibuat.. Yeesss!!!.
